Coconut Oil Pumpkin Bread

Ingredients:
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 cup all-purpose flour
  • 3/4 cup white whole wheat flour (*see alternate substitution below)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 3/4 cup pumpkin puree (not pumpkin pie filling)
  • 2 eggs
  • 1/2 cup melted coconut oil
  • 1/3 cup water
  • 1 teaspoon vanilla extract
